Optimal Water Temperature for Brewing Tea
The water temperature for brewing tea plays a crucial role in determining the taste and aroma of the final brew. Different types of tea require specific temperatures to bring out their best flavors. Here are the recommended brewing temperatures for various tea types:
Green Tea
- Generally, green tea should be brewed at 80℃–85℃.
- Freshly harvested green tea is best brewed at around 80℃, while green tea stored for a year can be brewed at 90℃.
- High-quality green tea, especially early spring tea with delicate buds and leaves, should be brewed at a lower temperature (around 80℃) to prevent scorching the leaves.

White Tea
- Fresh white tea (such as young bud teas) is best brewed at around 90℃ to preserve its delicate flavor.
- Aged white tea (over three years old) benefits from boiling water (100℃) or even simmering to bring out its rich, mellow taste.

Yellow Tea
- The recommended brewing temperature for yellow tea is 85℃–90℃.
- Higher-grade yellow bud teas should be brewed at a lower temperature (around 85℃), while coarser, more aged yellow teas can be brewed at 90℃.
Oolong Tea
- Oolong tea should be brewed with boiling water (100℃) to fully release its complex aromas.
Black Tea
- Black tea is best brewed at 90℃–95℃, allowing the full range of water-soluble compounds to be extracted efficiently.
Dark Tea
- Dark tea requires boiling water (100℃) to ensure complete extraction of tea polyphenols, enhancing its deep, rich taste.
How Water Temperature Affects Tea Taste and Aroma
Water temperature influences both the speed at which beneficial compounds are released from tea leaves and the overall taste of the brew:
- Too high a temperature can extract excessive bitter compounds, making the tea taste overly harsh.
- Too low a temperature may not fully release the tea's fragrance and flavor.
Mastering the correct water temperature is essential for brewing the perfect cup of tea.
